ORIGIN:

Balsamic vinegar is made in the area once ruled by the Este Dukes; it is made from boiled grape must aged in a slow acetification process comprising natural fermentation and gradual concentration, without the addition of any flavouring substances.

FLAVOUR:

a full, gleaming dark brown in colour, it is dense and almost syrupy in consistency. It has a characteristic, complex, penetrating fragrance and a pleasant acidic tang underlying its sweetness. With an unmistakable traditional well-balanced sweet-and-sour flavour, it is full-bodied and tasty, with a distinctive velvety smoothness.

THERAPEUTIC AND COSMETIC PROPERTIES*:

the main properties of Modena balsamic vinegar are:  bactericide,  immune system activator, source of vitamins (A, B and C) and mineral salts, soothing for coughs, anti-inflammatory for joint conditions (arthritis, arthrosis, cramps, gout, lumbago), energising, gloss-enhancing for hair and anti-dandruff, and lifting for sensitive skins.

CULINARY PROPERTIES:

It improves the flavour of both raw and cooked dishes, from the most elaborate to the plainest, simplest fare.  It is used in both haute cuisine and everyday cooking, not only to give flavour and vigour but also as a garnish. It is particularly delicious with salads, cooked vegetables, fresh stuffed pasta shapes, fish, red meat and poultry and game.
